A Simple Chia Seed Pudding
Chia seeds pack a nutritional punch, but rather than just sprinkling them over dishes and smoothies, like a poppy seeds, why not create a much more filling meal. Try this simple receipe for creating a filling, highly nutritious dessert.
1/4 cup Chia Seeds
1 1/2 cups coconut milk (or almond milk or greek yogurt)
2 teaspoons of honey
a dash of vanilla
Whisk your chia seeds, coconut milk, and honey together in a small bowl or glass jar. Cover and leave in the refrigerator overnight.
Remove it from the fridge, and make sure your pudding looks thick and the chia seeds have gelled. Top with fresh fruit, seeds and nuts, and enjoy immediately.
