This generous slice would be perfect to for a summer picnic lunch, for morning tea or to fuel your outdoor adventures. </div><img src="http://static.wixstatic.com/media/441493_062c502fd0be41fa872fe71fe3e8f89b~mv2.jpg"/><div>Ingredients</div><div>500 gram bag Something to Crow About Trio of Supreme Nuts and Berries muesli (or a toasted muesli with oats/nuts/seeds/fruit)</div><div>100 grams rolled oats or extra muesli</div><div>¾ cup dried cranberries, goji berries or chopped dried apricots</div><div>250 gram bag coconut sugar</div><div>250 grams butter, diced</div><div>1/4 cup honey</div><div>1 teaspoon vanilla essence or extract</div><div>1 teaspoon ground cinnamon</div><div>1 teaspoon ground mixed spice</div><div>Method</div><div>Preheat the oven to 180°C. Set the oven rack in the middle of the oven. Line the base and sides of a 20cm x 30cm Swiss roll or slice tin with baking paper.</div><div>Into a large bowl stir together the Something to Crow About Trio of Supreme Nuts and Berries muesli, oats dried fruit and coconut sugar. In a saucepan over a low heat, melt together the butter and honey with the vanilla essence or extract, cinnamon and mixed spice. Once the butter has melted, pour into the dry ingredients and mix well to make sure all the ingredients are thoroughly coated in the buttery mixture. </div><div>Turn into the prepared tin and press down firmly. Ideally roll a smooth, straight-sided glass over the top of the muesli, pressing down firmly.</div><div>Bake in the preheated oven for 20 minutes or until the slices has begun to brown well around the edges and the whole mixture can be seen bubbling when you look through the oven door.</div><div>Remove from the oven and place on a wooden or heat-proof board. Place a piece of baking paper on top and sit a second slice tin on top. Half fill this tin with water (make sure it does not leak) to make an even weight pressing down on top of the slice and leave until cold.</div><div>If you do not have a second slice tin, use magazines or something of similar size. Weighting the slice will ensure it is deliciously firm and easy to cut into pieces. Pour into a small tray and then place the tofu into the tray and cover with marinade sauce, let it sit and marinate for 3 - 4 hours. You can flip the tofu upside down at the halfway point.</div><div>4. Place the seeds in a mortar and pestle and roughly smash them. Pour the smashed seeds onto a plate.</div><div>5. Once the tofu has soaked up plenty of the marinade, carefully place each piece into the seeds. Coat both sides evenly.</div><div>6. Heat a pan and let the coconut oil get warm. Place each piece of the tofu into the pan and fry until golden on each side, this should take 5 - 10 minutes.</div><div>7. Meanwhile, shred the kale leaves and place in a steamer until just soft (several minutes only). Remove from the heat and drizzle with olive oil and lemon, toss until well coated.</div><div>8. To serve, pile up two bowls with even amounts of kale and top with 4 crispy tofu strips each. Cover, and simmer on the lowest heat for 10-15 minutes. Remove garlic slices from the sauce.</div><div>4. For crust. Put cauliflower florets into a steamer or colander set over a pan of boiling water. Cover with a lid and steam for 10 mins or until soft.</div><div>Preheat oven up to 230C (450F). </div><div>5. Heat the pizza stone if you use it.</div><img src="http://static.wixstatic.com/media/441493_1b9a64f3d8c04f08a7e69749a2778e54~mv2_d_2362_3422_s_2.jpg"/><div>Turn the cauliflower into rice (crumbs) using a food processor. </div><div>6. Tip cauliflower onto a clean tea towel and leave to cool a little. Once cool enough to handle, scrunch up the tea towel and squeeze as much liquid as you can out of the cauliflower, then transfer to a clean bowl.</div><div>7. Mix well in the bowl remaining ingredients for the crust. Place cauliflower “dough” on the lined with a parchment paper baking sheet and shape into pizza crust. </div><div>8. If you use a pizza stone, carefully transfer baking paper with crust onto the preheated stone. </div><div>9. Place in oven for 17 minutes until golden brown and crispy.</div><div>10. Spread the tomato sauce over the pizza base, then arrange the roasted vegetables on top. Return to the oven for about 10 minutes.</div><div>11. Fill the pot with enough cold water to cover the potatoes and bring to a simmer over medium-high heat. Reduce the heat to medium and simmer the potatoes until they are completely tender and easily pierced with a skewer, 30 to 35 minutes.Put the spinach leaves in the pan with a half of cup of boiling water, and allow them to boil for about 10 seconds until you see a bright green color. Chill it slightly, then strain the spinach well and just squeeze the leaves to remove as much of the water as you can. Chop blanched spinach finely or blitz using a hand blender. The green coloring is ready.Drain, cool slightly, peel and mash potato using potato ricer or sieve. Let cool until almost at room temperature, at least 20 minutes. In the mixing bowl mix together potato, salt, beaten egg and spinach mix.Place the potato mix on a work surface covered with flour. Sprinkle potato with 1 cup of flour. Mix with your hands until the flour is moistened and the dough starts to clump together. Add more flour during kneading process if dough too sticky. Knead about few minutes until you get a smooth, supple dough. Use a dough scraper if the dough sticks to the surface. The amount of flour can vary depending on the type of potato, the type of flour and the amount of liquid in the spinach. Add just enough flour to hold gnocchi together but not to make them heavy. Usually, I add 1 – 1 1/2 cups of flour.Divide the dough into 4 equal pieces. Shape each piece into sausages about 2,5 cm in diameter and cut the sausages into 2 cm chunks. Make the grooves using the fork or gnocchi board (see the video above). Gnocchi with grooves will trap more sauce.Bring a large pot of water to the boil (I use 4L pot). Add about 2 Tbsp of salt. Cook the gnocchi in few batches. Throw in the boiling water, stir, then wait for them to rise to the surface. Count slowly to 10, then remove with a slotted spoon and transfer to the skillet with vegetables. Add gnocchi to frying pan and toss to coat in oil. To serve, divide gnocchi and vegetables among bowls, spooning over with pesto sauce. Garnish with basil leaves and enjoy immediately.Spring vegetables: Heat a large frying pan over medium heat, add a good splash of olive oil, garlic, asparagus spears and snow peas. Cook for about 5 minutes, stirring occasionally, or until asparagus and peas are tender. Season with salt and pepper.For Pesto. Combine all ingredients for pesto sauce into the blender or food processor and mix well. Add more olive oil depending on how creamy you want it. In a new study in the Archives of Internal Medicine, people who for a year followed a very-low-carbohydrate diet—which allowed only 20 to 40 grams of carbs daily, about the amount in just 1/2 cup of rice plus one piece of bread—experienced more depression, anxiety and anger than those assigned to a low-fat, high-carb diet that focused on low-fat dairy, whole grains, fruit and beans. Researchers suspect that carbs promote the production of serotonin, a feel-good brain chemical. Also, the challenge of following such a restrictive low-carb diet for a full year may have negatively impacted mood.</div><div>3. In a recent study of close to 3,500 men and women published in the British Journal of Psychiatry, those who reported eating a diet rich in whole foods in the previous year were less likely to report feeling depressed than those who ate lots of desserts, fried foods, processed meats, refined grains and high-fat dairy products. Previous studies have shown that antioxidants in fruits and vegetables and omega-3 fatty acids in fish are associated with lower risk of depression. Folate, a B vitamin found in beans, citrus and dark green vegetables like spinach, affects neurotransmitters that impact mood. It’s possible that the protectiveness of the whole-food diet comes from a cumulative effect of these nutrients.</div><div>4. Fish</div><div>Eating oily, fatty fish (salmon, tuna, sardines, rainbow trout) and mussels will give you omega-3s—a key mood-boosting nutrient and one our bodies don’t produce. In a large bowl, whisk eggs, nutmeg, milk, feta and salt together until combined. Set aside. Squeeze as much water as you can out of the defrosted spinach. To do this, place in a colander and use your clean hands to squeeze out excess water. Roughly chop spinach and mix into egg mixture.</div><div>2. Heat olive oil in a medium fry-pan on medium heat. Cook onions, garlic and thyme until soft and lightly golden, 4-5 minutes. Add brown sugar and balsamic vinegar and continue cooking for a further 4-5 minutes, until caramelised.</div><div>3. While onions are cooking, layer filo pastry. Brush a large pie or baking dish with a little butter/oil. Lay 2 sheets of pastry in the dish and brush with butter/oil. Rotate dish 90 degrees and top with two more sheets, brush with butter/oil then rotate again and top with remaining two sheets, so filo overhangs evenly on all sides.</div><div>4. Fill filo with spinach and feta mixture and scatter over caramelised onions. Gather up the overhanging filo and crinkle up to form a frilly edge around the pie. In a bowl mix together 2 cups (uncooked) oatmeal, 1/3 cup sugar, 1 teaspoon baking powder and 1/4 teaspoon salt. In another bowl combine 3 tablespoons melted (and slightly cooled) butter, 1 egg, 1/4 teaspoon vanilla extract and 1 cup milk. In a well greased baking dish place a thin layer of sliced bananas, then the oatmeal mix, then pour on the milk mixture. Try to distribute the milk mixture evenly over the oatmeal. Bake at 350 F for 20-25 minutes. </div><div>For the pumpkin spice baked oatmeal simply add 1/4 cup pumpkin puree, 1/4 teaspoon cinnamon and a pinch of nutmeg to the milk mixture before you pour it over the top of the oats.</div><div>For the coffee cake baked oatmeal add 1/4 teaspoon instant coffee or ground espresso to the milk mixture before pouring it over the oats. Garnish the top of the oatmeal with a crumb topping made of 2 tablespoons cold butter, 1/4 cup flour and 3-4 tablespoons brown sugar.
